Easy Marshmallow Fondant

I never knew there was a way to make fondant at home. That is, until a friend shared a recipe with me for marshmallow fondant. I worked on it, simplified it, and know I want to share it.

Easy Marshmallow Fondant
1 package mini-marshmallows
2 cups +1/2 cup powdered sugar

  • Pour marshmallows into a large plastic mixing bowl and microwave for 1 minute.



  • Stir in 2 cups powdered sugar



  • Wet your hands, and continue to mix the dough with your hands, kneading it in the mixing bowl as you would bread dough



  • Knead the fondant on the counter for about 5 minutes, sprinkling first with powdered sugar and continuing to add powdered sugar to keep the fondant from feeling sticky


  • Form into a ball and cover with plastic wrap until it's needed, or use immediately

span style="font-family:verdana;font-size:130%;">I hope this turns out to be a new and fun way to decorate your cakes. Many people don't like the taste of store-bought fondant. I think this recipe tastes much better, and is also easier to work with because it's softness.

My Latest Two Cakes

I've been having so much fun in my kitchen! I just finished the Garfield cake this afternoon. I think it turned out well. Cartoons are hard to do with cake because the color and look has to be perfect or else it won't look like the character. I think I got pretty close.


The "Belle Cosmetics" cake was for Jenna's best friend Isabelle. Her family calls her "Belle" so I thought up this idea. I used a lot of pearl dust to make it sparkly, and it was DELICIOUS!! Strawberry Cake with Cream Cheese Frosting. YUM!

I'm Back!

I know-I know! It's been a while since my last post. The holidays were fun and busy, and now I'm back.

I'll try to update you on the latest in the Kennedy family.

Here's the latest cake. I just made it today. It's the Transformer "Bumble Bee" Car. Cool Huh?




Ben got a haircut, and I snapped some pictures. Here's the cutie in action, trying to wiggle away.




Ben and I have been doing a Co-Op Preschool with some friends. This week we had preschool at the Liddell's house. Here is a picture of Robyn reading to the group on the couch. Afterwords, they played at the table with shaving cream and matchbox cars. Ben loved it!






As many of you know, I did something completely crazy and went to an open casting call for Survivor. Here is a picture of me and my "line buddies" sitting in the mall. We waited in line for almost 7 hours, but I was prepared with a crochet project, a comfortable chair, and a good book. I had a great time and made some fun memories.


This is my application that Emily and Jenna decorated for me.


I haven't heard from Survivor yet, but if they call me you'll be the first to know. I still have my fingers crossed. If they don't put me on, they're making a big mistake!
